The Serrano Pork Dry-cured Shoulder is an authentic Jamon Iberico made from perfectly fatty pigs from Spain dry-cured using artisanal methods in La Alberca. Serrano has been known to be one of the most commonly served traditional ham ingrained in the customs and traditions of every Spanish region. The production process of this Finca Helechal Serrano ham involves salting for up to two days, post-salting, and rinsing the meat to then dry-cured the fresh meat for the fats to melt away and transform into a beautifully cured shoulder ham.
